The “saccottino” of the Pizzeria Terme


This is the “saccottino” of the Pizzeria Terme (via Piave). Filled with green and white asparaguses and mozzarella; in the center the traditional Bolzanina sauce! Yummy! What I appreciate even more is that they use spelt for the dough. It makes it lighter, more tasty and fragrant 🙂

    I made the same dish at home inspired from your post, it’s fairly simple to do and well worth the effort 🙂 Before you ask I did not find a receipt but rather followed my cooking instinct. Thanks for the inspiration!
